Knox-Quila Cantina, a new restaurant at Covenant Health Park, is set to bring a unique dining experience to Knoxville. This family-owned restaurant, with roots in the birthplace of tequila, Mexico, promises to offer more than just tacos and tequila. The owner, Ali Cobian, aims to educate patrons on the art of tequila production and the authenticity of Mexican cuisine. With a focus on quality and a family-recipe menu, the restaurant will offer a full bar featuring over 200 types of tequila, including reposado flights and soft-serve margaritas. The restaurant will be open until 2:30 a.m. on weekends, providing a high-end bar service and a small plate menu. The space, located in the Beauford Delaney building, will feature a bar running the full length of one wall, adorned with intricate murals honoring 'The Day of the Dead'. This restaurant is one of several new additions to Covenant Health Park, including BerrySocial, Crispy Cones, Disco Chicken and Donuts, Iron Forge Brewing, Jackie's Dream, Jonathan's Grille, and T. Ralph's Burgers & Fries. The park is set to become a hub for diverse dining options, with a focus on minority business owners and local cuisine.
